About the Author

Chef JONATHON SAWYER is a proud Clevelander and a graduate of the Pennsylvania Institute of Culinary Arts. He began his culinary career at The Biltmore Hotel in Miami before working in New York City alongside Charlie Palmer at Kitchen 22. Sawyer later became Michael Symon's executive chef at Parea. In 2007 he moved back to Cleveland and opened four restaurants: Greenhouse Tavern, Trentina, Noodlecat, and Street Frites. He also runs a vinegar company, Tavern Vinegar, which has been featured in Tasting Table and Eater. He has won the James Beard Award for Best Chef Midwest, Food & Wine's Best New Chef, and Bon Appetit's Best New Restaurant.

And if you've tried making a batch of vinegar before--and it failed, you will learn very quickly in this book just why it failed. That is how thorough author Jonathon Sawyer is. He shows the reader that making vinegar can be a basic unpretentious task, if one is willing to follow some uncomplicated and straightforward rules. He also demonstrates how to make artless, but great-tasting, vinegars or to conjure up complex flavors that can provide you with the "secret ingredient" you are looking for.Regarding the recipes in this book: Do not overlook the fact that the words "with recipes" is in small print on the cover of this book. I found the recipes to be interesting, but were not nearly as important as the "how to" and the "why" of all things vinegar. Except for the recipes that actually make vinegar, the other recipes have not turned out to be favorites of mine. BUT, all those other recipes that have vinegar in the ingredient list, (sometimes just a tablespoon), are extremely important as part of the learning process of how to use vinegar in your cooking. And all the recipes definitely do provide food for thought, and they also provide a huge, strong platform for jumping off into your own conjuring cooking world.Writing style of the author is very personable and fun, although the book could have used a more sophisticated hand in editing. Page layout and type style and size is easy on the eyes. Pictures are good-quality and plentiful.It is a book that should be getting more attention. I am very glad to have run across it, and I think it's a great addition to my kitchen library shelves. I have gained a lot of information from this book, and I know I will continue to do so as I go back to it often.

at turns witty, philosophical, and deeply informative.....but always enjoyable. house of vinegar is a book you'll want to keep in your kitchen at all times for inspiration. great photos keep the pages turning. and a bounty of recipes and sage advice pull it all together in a beautiful and elegant package.

Loved the stories that led him to both his passion for vinegar and food. The vinegar and pickling recipes gave something for everyone. Great read.
